Preheat Oven to 225F degrees
Mix the oats, nuts, coconut, and brown sugar together in a large bowl.
Since we keep our maple syrup in the refrigerator, I add the coconut oil, maple syrup, and salt to a ceramic bowl then microwave for 30 seconds until the syrup heats up and the oil melts. Mix wet mixture again.
Combine wet mixture with dry and stir to coat oat mixture. Save the dried fruit/chocolate chips for after baking.
Line baking sheets with parchment paper for easy cleanup. Spread the granola mix on baking sheets. Place in oven and stir the mixture every 20-30 minutes while it bakes. Sometimes I don't mix it and it will harden. You can just break it after it's done baking if you don't want to take it out.
Leave in the oven for 1hr and 15 minutes. Take the mixture out and let it cool before storing in an airtight container and adding in the extra mix-ins. The fruit and chocolate will melt if added when it is hot.
