Slow Cooker Customizable Black Beans

Equipment

  • Crock pot/Slow cooker

Ingredients

  • 3/4 cup Dried black beans
  • 1 & 3/4 cups Stock Vegetable or chicken
  • 1/2 tbsp Cumin
  • 1/2 tsp Chili flakes
  • 1/2 tsp Dried oregano
  • 1/2 tsp Ground coriander
  • 1 pc Bay leaf
  • Lime juice For after cooking
  • 1 pc Chipotle in adobo optional
  • 1/2 tsp Smoked pepper powder optional
  • 1/4 link Spanish dried & cured chorizo, cubed optional
  • 2 pcs Bacon, diced optional

Instructions

  • Add all ingredients minus the lime juice to the slow cooker. Cook on low for 7-8 hours or on high for 3-4 hours.
  • Stir the beans occasionally and make sure it does not need more liquid. I usually stir every 2-3 hours on low. All slow cookers cook differently. Heat up liquid in the microwave until hot and add to the slow cooker if more liquid is needed.
