Add olive oil to pan. Turn heat to medium. Wait until the pan is hot and add the chopped tomatoes. Wait a minute or 2 for the tomatoes are softened.
Add water and heat until hot. Add tomato paste and stir into the hot water and tomatoes.
Add baharat spice mix and some salt to taste. Add the sugar. Cook down until the water and tomatoes are less watery and more like a sauce.
Add the chopped leftover shrimp until shrimp are heated. If using raw shrimp cook in the sauce for about 7 minutes. Add water if the sauce gets too thick.
Crack the eggs into the sauce. Add goat cheese on top. Put a lid on the frying pan so the eggs cook more thoroughly. Eggs should cook within a few minutes to be runny texture and goat cheese will be heated.
