Squid Couscous

This is a really easy and simple recipe I like to make often. I really like squid so it is one of my favorites. You can add various vegetables to it like carrots or zucchini. Chorizo is also tasty in this recipe.

Equipment

  • 1 Large sautee pan
  • 1 Small stock pot for couscous

Ingredients

  • 1/2 cup Dry couscous
  • 1 tbsp Butter
  • Salt to taste
  • 1/2 cup Frozen peas
  • 1/2 cup Frozen corn
  • 1/4 cup Chopped sundried tomatoes or roasted peppers
  • 12oz Squid
  • 1/2 tsp Smoked paprika
  • 1/2 Lemon

Instructions

  • Make cousous according to package. I used 3/4 cup water for 1/2 cup couscous and added a heavy hand of salt to the water.
  • Heat the skillet over medium and add frozen peas and corn until slightly defrosted. Add butter and sundried tomatoes. Cook until the vegetables have soaked up the butter.
  • Add squid and smoked paprika. Cook for about 4-5 minutes until tentacles or corners curl. Turn off heat and squeeze the lemon over. Mix in finished couscous.
