I took refined sugars out of my diet and have been coming up with some recipes that are low in sugar. I made steak one night and since I live alone I only ate half the steak. A few days later I needed to spice up the leftover steak. I came up with this roasted vegetable and steak salad.
Roasted Steak Salad

- 1 Fry pan
- 1 Mixing Bowl
- 1 Cutting board
Ingredients
- 2 tbsp Farmers cheese or ricotta cheese (optional)
- 1/4 lb Leftover steak
- 1 Zucchini
- 2-3 Large mushrooms
- 1 tsp Olive oil
- 1/2 Large jarred roasted red pepper
Dressing
- 1 tbsp Extra virgin olive oil
- 1/2 tbsp Garlic flavored olive oil
- 2 tbsp Fresh chives
- 1 tsp Balsamic vinegar
- 1/4 tsp Dried thyme crushed in your hands
- 1/4 tsp Salt or to taste
- 1/2 tsp Maple syrup (optional)
Instructions
- Slice the zucchini and mushrooms thin. Sauté them with a little olive oil until softened and roasted (about 5 minutes). Mix while sautéing to ensure even cooking.
- Slice the roasted pepper and steak thin. Mix in a mixing bowl the steak, pepper, zucchini, and mushrooms.
- Mix everything for the dressing. Add the dressing to the mixed salad. Add in the farmers cheese or ricotta if desired.
