This recipe is perfect for busy days. You just dump everything in the slow cooker and let it work. We always customize the recipe with things like canned chipotle peppers in adobo or homemade smoked spicy pepper powder.
Here is a new type of tortilla brand I tried. They are much thicker and softer than the average tortilla at the store. To make the tortillas plyable I put a damp paper towel on top and microwave for 15-20 seconds.

- Crock pot/Slow cooker
Ingredients
- 3/4 cup Dried black beans
- 1 & 3/4 cups Stock Vegetable or chicken
- 1/2 tbsp Cumin
- 1/2 tsp Chili flakes
- 1/2 tsp Dried oregano
- 1/2 tsp Ground coriander
- 1 pc Bay leaf
- Lime juice For after cooking
- 1 pc Chipotle in adobo optional
- 1/2 tsp Smoked pepper powder optional
- 1/4 link Spanish dried & cured chorizo, cubed optional
- 2 pcs Bacon, diced optional
Instructions
- Add all ingredients minus the lime juice to the slow cooker. Cook on low for 7-8 hours or on high for 3-4 hours.
- Stir the beans occasionally and make sure it does not need more liquid. I usually stir every 2-3 hours on low. All slow cookers cook differently. Heat up liquid in the microwave until hot and add to the slow cooker if more liquid is needed.
