I love eating baked donuts as a snack cake. They’re extremely easy to make and they go great with coffee! I had extra dought after filling up my 1 donut pan so I also made some little cakes in ramekins. I cooked the cakes longer; about 17 minutes in the oven.

Ingredients
- 1 Egg
- 2 tbsp Vegetable oil
- 1/2 cup Lactaid or dairy free milk
- 1/2 tsp Vanilla extract
- 1 cup Flour
- 1/3 cup Sugar
- 1 tsp Baking powder
- 1/2 tsp Salt
Instructions
- Preheat oven to 350F degrees.
- Mix egg and oil with a fork until well combined. Add in milk and extract and mix again.
- Add in flour, sugar, baking powder, and salt. Mix until just combined.
- Place the batter into donut pan and fill the cavities 3/4 to the top. I only had 1 donut pan so I filled the 6 cavities and also oiled ramekins to make tiny cakes with the leftover batter.
- Bake for 10-12 minutes or until a fork comes out clean. Mine took about 11 minutes.
