Roasted Bell Pepper Hummus

I made this recipe for a garlic free hummus that is still very flavorful. Using the roasted red peppers is a way of giving the hummus another depth that is absent from leaving garlic out. You could always use this same recipe and add a clove of garlic to the food processor/blender. I used a yellow bell pepper that I roasted myself in our oven. The store had a managers special on older bell peppers which were still perfectly good for roasting and preserving. To roast your own bell peppers, put the bell peppers on an aluminum wrapped baking sheet and turn on the broiler to high. Take a look at them after 4-5 minutes and flip once the skin starts to blacken. Repeat on the other side. Once the skin is blackened, take out of the oven to cool and then peel the skin off. Cut out the inside and remove the seeds.

  • Food Processor or Blender

Ingredients

  • 1 15oz can chickpeas
  • 1/4 cup Tahini
  • 1 Roasted pepper from a jar or fresh roasted
  • 1 tbsp Fresh lemon juice
  • 1/2 tsp Salt
  • Extra virgin olive oil

Instructions

  • Add all ingredients to the food processor or blender except the olive oil. After mixed, add olive oil until you get the desired consistency. Add salt to taste.
