Gnocchi with Sausage in Mustard Cream Sauce

An extremely easy to make gnocchi recipe. The gnocchi is very filling so it’s a good meal to fill you up. It even tastes good reheated as leftovers.

Gnocchi with Sausage and Creamy Mustard Sauce

Ingredients

  • 1 pkg Dried gnocchi about 450g
  • 2 tsp Olive Oil
  • 1/2 cup Sundried Tomatoes chopped
  • 2 Sausage links or patties
  • 1/2 tsp Garlic powder optional
  • 1 tsp Italian seasoning or 1/2tsp oregano, 1/4tsp basil
  • 1 tsp Sage minced, dried or fresh
  • 1 cup Chicken Broth or 1tsp bouillon + 1cup water
  • 3/4 cup Frozen Spinach
  • 3 tbsp Sour Cream
  • 1 tbsp Dijon Mustard
  • 2 tbsp Shredded Parmesan

Instructions

  • Cook gnocchi according to package in boiling water. Drain and set aside. It's ok if the gnocchi stick together once made and waiting. They will be put back in the sauce at the end.
  • Add olive oil to large saute pan on medium heat. Add sundried tomatoes. Cook for a minute or 2 and add sausage. Break up sausage with spoon while cooking. Cook sausage until done.
  • Add in spices. Cook for another minute. Add in broth and heat up until just boiling. Add in frozen spinach and peas. Once thawed, add in sour cream and mustard.
  • Once sour cream is mixed in, add gnocchi back in and break up with a spoon in the sauce. Cook for another 3-4 minutes on medium. If using fresh spinach add 2 minutes before dish is completed. Add Parmesan cheese at the end and melt into the sauce. Everything is done!
